TASTING : Nose of cherry and sage, purple color, taste of thyme, garrigue, spicy, fruity, soft tannins, delicious, close to the terroir.

SERVING : Serve very chilled, making sure that the wine does not heat up excessively in the bottle or in the glasses. A slight opening time prior to service may be beneficial.

TERROIR : Hillsides in the scrubland ecosystem of the Causse de Vialanove. Production limit zone. Limestone, stony soils. Hot and dry climate, cold in winter, with persistent winds.

Organic farming, treatments with contact products. Short size, waning moon for Grenaches. Temporary natural grassing. Organic fertilizer and compost, mechanical tillage. Manual deseeding and disbudding, respect for the foliage. Manual harvest in small crates with sorting in the vineyard and cellar.
